Pea Soup

One of my favorite cookbooks. Pea soup is one of the easiest soups to make.
Chopping.
Simmering peas.
Sauteing carrots, celery and onions.
Yum. I made this soup in the morning for lunch. Ayurvedic wisdom suggests eating the largest meal at lunch. Soup is not such a large meal of course. This menu calls for the addition of crusty bread and a salad and dessert. I like eating the largest meal at noon. Then I have all afternoon to digest the food. And at night when I am cranky, I fix myself a sandwich instead of cooking.
