Couscous Salad with Orange and Garlic

What could be easier and tastier on a hot summer's day than couscous. Buy the grain at your local health food store. Add hot water and veggies and wallah.

1 1/2 cups couscous
1/2 cup raisins
1 tsp turmeric (I skipped this)
2 cups boiling water
2/3 cups sliced almonds
2 cups chick-peas or 1 15 oz can, rinsed and drained
3 scallions, thinly sliced
2 medium tomatoes, halved, seeded and diced

dressing
1/3 cup fresh lemon juice
1/3 cup olive oil
2 garlic cloves, minced
Grated rind of 1 orange
2 TBS minced fresh basil or 2 tsp dried
1/2 tsp salt
black pepper to taste
green-leaf lettuce

serves 4 as a main course. For one person I cut the recipe in half and still had tons.

1)Place couscous, raisins and turmeric in large bowl and cover with boiling water. Stir well. Cover bowl with foil or large plate and let sit 5 minutes. Fluff with fork, cover again for 10 minutes.

2) stir in almonds, chick-peas, scallions and tomatoes

3) combine lemon juice, olive oil, garlic orange rind, basil, salt and pepper and beat to blend. Pour over couscous. Toss. Cover and chill at least 30 minutes. Serve on lettuce leaves. (recipe courtesy of Quick Vegetarian Pleasures by Jeanne Lemlin.)

Note: couscous (koos-koos) is a grain product made by mixing semolina and water to form tiny granules. Popular in North African cooking, it has a light delicate flavor. Can be made into a salad, pilaf or main course with vegetables and meat.

This is a perfect summer salad...love the addition of orange! I always keep couscous, polenta and orzo for a change from potatoes and rice.

Kimmie, I have a set of these plates. Long story short. My husband now ex, now deceased had promised me a set of handmade dishes. He traded a sculpture for them he said. They never materialized, however for years I drooled when I thought of this mystical set of dishes. I love handmade pottery.

Years later, after divorce and life went on, I received a small inheritance and immediately asked a local potter to make me a set of dishes. They are stoneware, a little heavy, but beautiful. I use them every day.

I'm not moving yet, have no place yet chosen to go.

Blue Sky: I have made this salad before but never with the orange rind as usually I dont have an orange. But i happened to have an orange this time so grated the rind and wowsie: it really makes the salad extra-special.

Looks like a work of art. Some food is like that, huh? And with that plate, especially so.
I have some left-over chicken that would make another nice addition to it, I'd think. As it is, I don't have the other ingredients, so planning a chicken salad. Anything light sounds wonderful in this extreme weather.
