Ma's Cheese Cake

In preparation for Mom's Saturday birthday I am making a cheesecake. Everyone in the family loves cheesecake. I make it several days ahead so the flavours gel. Tomorrow I'll top it with raspberry glaze.

The Recipe Bake 60-70 minutes 275 degrees

CRUST 2 cups crushed graham crackers, 2 tsp cinnamon, 2 TBS sugar, 1 stick melted butter or margarine. Mix together and press in bottom of an ungreased spring form pan.

CAKE 1 1/4 cups sugar creamed with 2, 80z packages of cream cheese. Add 4 eggs one at a time. Add 3 cups sour cream one at a time. 2tsp vanilla and 1/2 tsp almond extract. Blend well and pour over crust.

OPTIONAL TOPPING Mix together a 10 0z bag of frozen raspberries, 1/4 cup sugar, 1/4 cup water and 1 1/2 TBS cornstarch. Cook till thick and glazed. Pour over chilled cake. (strain seeds before pouring if desired).

Chill cake 8 hrs.

Hmm, I'm devouring the cake too, I don't think there will be any left until your mom's birthday...

Yummy. I'm not good at baking cakes but now I COULD do a cheesecake with your recipe, if I wanted.

I am not good at baking regular cake, it always falls, but cheesecake for some reason comes out ok.

Andrea how can I answer your ? is it still night here??? Usually I write on my blog in the daylight hours, I can say that much. When it's midnight in Paris I think it's 6 hours earlier here?? so it'd be 6 pm which now at this time of year is dark or night.????

Andrea up at 2am. YOu are a night owl. Yes, I was making the cake early in the am around 8:30 am but it gets light here around 7 am now because we changed the clocks. Maybe you don't do that in France??? We move our clocks back an hour so it is light earlier in the am.
